Gourmet on the Fly is a true upscale market specifically targeted to the airline passenger. Our goals and objectives are:

  • Provide a variety of food and beverage choices customers will really enjoy and appreciate when traveling
  • Focus on freshness, quality, price/value, service, speed of transaction, something unique, healthy, upscale and organic when available
  • Stay in tune with health trends and consumer demands for different foods and beverages as they appear in the marketplace
  • Create a "wow" impression when a customer walks into the market
  • Provide a custom designed shopping bag with handle and our logo, making it easier to transport the purchases on to an airplane
  • Create a memorable experience for the customer while allowing them to either browse and enjoy the experience or get in and get out, but with something special
  • Keep the demographics of the passenger in focus and provide products which cater to that group.

Stay focused on customer needs:

  • The size or type of package the products are presented in
  • Adding pleasure to the travel process
  • Providing choices which appeal to the masses, both foreign and domestic
  • Quick sale transactions using latest technology credit card processing and POS systems with DSL lines if available
  • Operating hours which begin at 4 a.m. and extend until the last flight leaves the terminal

Research and Development - We feel our concept is always a work in progress, striving to fulfill the objectives stated above. How do we do this? The senior members of Mar Air Foods, Inc. not only come from strong business and foodservice backgrounds, but also travel extensively. Couple this with a passion for putting smiles on the faces of travelers gives us the energy to keep the concept "fresh."


Fair Pricing - Research at other fine stores helps us to establish price points which are reasonable for what we sell. By doing price comparisons, we can be assured of providing great products at price acceptable to the customer.
